All stages of production, from receiving olives at the mill, waiting for treatment, defoliation, washing, decantation, centrifugation, filtration and storage of olive oil are performed with high standards and best practices. These rules refer to the hygiene, occupational safety, quality assurance and traceability, and environmental protection thus achieving an overall superior quality of olive oil.
